We import the Gadus morhua species of codfish (the only one that can legally be called “cod”).
The cod comes from Iceland, a country which is located at latitude 66a very close to the Arctic Circle. Since the water there is naturally very cold, it is the ideal habitat for this fish. Our cod is captured one at a time using a fishhook. This technique, as oppose to fishing with nets, does not damage the flesh as the fish are not subjected to pressure or heavy blows. It is also an extremely environmentally-friendly method that minimises the damage caused to other species and the seafloor.
